Principle and goals

In order to increase productivity, high speed slicers are used with maintaining good quality slices. The surface of the product has to be hardened (crust frozen) by cooling a few millimetres of the product surface. The core of the product must keep a positive temperature (generally +2°C to +4°C).
The equipment must be compact with hygiene construction specifications for clean room operation.
