Liquid carbon dioxide - ALIGAL™ 2


Liquid carbon dioxide is used in the food business as cryogenic fluid in chilling or freezing operations or as dry ice for temperature control during the distribution of foodstuffs.


Bulk liquid carbon dioxide as supplied to the food and beverage industries now has the most detailed and stringent product specification of any of the common bulk gases. Air Liquide has taken a leading role in every stage of the production of this specification, which is now accepted by leading authorities throughout the world, and which will become the new European Standard for CO2 in due course.

Gaseous CO2 is …

  • tasteless, odourless, colourless,
  • non-flammable and relatively inert when dry,
  • highly soluble in water, forming carbonic acid (H2CO3),
  • about 11/2 times denser than air,
  • a natural bacteriostat.

Liquid CO2

  • cannot exist at atmospheric pressure,
  • "flashes" to a mixture of cold gas and solid CO2 (dry ice) when depressurised,
  • has solvent properties similar to hexane,
  • becomes "supercritical" when pumped and heated above the critical point - an even better solvent.

Solid CO2 (dry ice)

Dry ice is the solid form of carbon dioxide. It is colourless, odourless, non-flammable, and slightly acidic. By a natural phenomenon, solid CO2 (-78°C) is subliming into cold gas. This cold gaseous atmosphere enables preserving of chilled and frozen goods. Solid CO2 is an efficient (150 frigories per kilogram at -78°C) and autonomous source of cold, without any residue after sublimation.
It is available under different forms:

  • snow resulting from a pressure drop of liquid CO2,
  • ALIGAL™ dry ice: dry ice resulting from a snow compaction in blocks, slices or sticks.
